Patience Distillery - A Season in Every Bottle
Patience began as curiosity, then obsession, then a shared vision to create spirits that capture the very essence of the seasons.
It began with my husband Maxime, an engineer fascinated by flavour and process, experimenting with a cold distillation setup in the spare room. The technique was transformative, allowing each botanical to be treated with the same precision and respect a winemaker gives their grapes.
At the same time, I was studying wine and instantly recognised the parallel. The first distillates were strikingly pure. Even a single note, like mint, carried knockout clarity - vivid in both smell and taste.
From there, we experimented relentlessly. We tested, refined, and rejected countless combinations before shaping a collection of gins rooted in the seasons. After all, the drink you crave on a frosty winter evening is not the same as the one you reach for on a summer’s day.
This idea of seasonal flavour engineering became our creative compass, crafting recipes designed to capture a mood, evoke a moment, and spark memory.

Our process
Patience is more than a name. It is a philosophy. Cold distillation takes longer than traditional methods, but the reward is exceptional clarity and freshness.
Each botanical is distilled separately at its optimal temperature, vacuum pressure, and cut point. No shortcuts. No one-size-fits-all batch runs.
The process is meticulous. Some botanicals require more than a dozen trials. Others, like pelargonium in the Summer Gin, need exact conditions to preserve their character. Every choice, from harvest to final blend, is intentional.
Because distillation and blending take place in-house at the Kensal Green distillery, quality is fully controlled from start to finish.

Why seasons matter
Our connection to seasonality runs deep. Both of us grew up in the countryside, where you ate what was in season and waited for what wasn’t. That rhythm shaped daily life.
Some ingredients are truly seasonal, like the tender rhubarb shoots in our Spring Gin. Others, like basil or lime, may not be British crops, but they still evoke a season’s mood.
Like wine, we embrace seasonal variation. A hotter summer might soften basil. A wetter autumn might deepen apple spice. It is all part of the story.

Quiet luxury
We’ve always said we want to be the best gin you’ve never heard of. No celebrity endorsements. No duty-free displays. Just spirits made with obsessive care, shared from hand to hand because people genuinely love them and trust what’s inside.
Every bottle we make is hand-labelled, hand-numbered, and hand-wrapped. Not because it’s efficient, but because the liquid inside deserves that level of craft, attention, and respect. We’d rather grow slowly, protect that standard, and build loyalty bottle by bottle than chase volume for its own sake.
